Makreel

 

 

 

Mackerel has a shorter shelf life than tuna and salmon, which can be kept in the fridge for about 3 days after purchasing it, while mackerel will taste somewhat bitter on the 3rd day, and maybe even on the 2nd day.

Mackerel served in a Japanese restaurant (Saba) will therefore generally be marinated / salted, if not smoked.

Some people may react allergic to mackerel, because of the specific amines it contains.

The taste of mackerel is exquisite; somewhat similar to herring, but more subtle and softer.

In Japanese restaurants the name for American mackerel (Scombermorus cavalla) is Hawara

Sawara is Spanish mackerel (Scombermorus maculatus).

In Europe Atlantische mackerel (Scomber scombrus) is standard.

 

 

 

  Hors mackerel is smaller and not related to normal mackerel. In Japanese restaurants Aji is hors mackerel marinated in vinegar.
